Vegetable Fusilli Alfredo
To all my readers, Comfort Food Creator(FC) is back again with one of its favourite recipes. As Valentines day is coming soon, so why not share a recipe created in the land of Love. This recipe is made straight from my heart. It was created in the land of love, art and culture - Italy. The land of great vineyards and delicious food, Italy has always been the epitome of Gourmet food. As an ardent lover of comfort food; One such meal which always excites me is - Pasta. By now, you all have gotten an idea as to what this recipe is about.
The name of the recipe is - "Vegetable Fusilli Alfredo."
One of the classic dishes of Italian Cuisine, this recipe tends to create magic with fresh & local ingredients bought from the farmers market. Alfredo as the name suggests, is born in the city of Rome. This classic sauce is a blend of butter, cream and parmesan cheese with a touch of milk and flour. Loved by all, this recipe is flexible and easy to make.
The main character of this drama recipe is my favourite go to cheese - Parmesan.
Preparing time - 40 minutes, Serves Two people.
For this recipe, we need -
- 150 grams of fusilli pasta
- 2-3 tbsp butter
- 2-3 tbsp oil
- 1 tbsp flour
- 1-2 cup fresh cream
- 1 cup milk
- 50 grams parmesan cheese
- 50 grams red onion diced
- 50 grams red bell pepper diced
- 50 grams yellow bell pepper diced
- 50 grams mushroom chopped
- 2-3 garlic pods finely chopped
- 1-2 tbsp Italian seasoning
- 1-2 tbsp chilli flakes
- Salt as per taste
- Water to boil the pasta
Steps to make this recipe -
- Boil water in a pot. Add the pasta when the water starts bubbling. Cook until the pasta is firm to the tooth.
- Take a pan and keep it on a medium flame. Add butter to it. When it starts melting add the flour and mix it. Cook for a minute and add milk to it.
- Coat the milk with the mixture nicely and try to remove all the lumps. When it starts thickening, add cream to it. Cook for 2-3 minutes and add the parmesan cheese to the sauce. Flavour it with some Italian seasoning, chilli flakes and salt. Your sauce is ready now.
- Take another pot and add oil to it. Keep it at a medium flame. Add chopped garlic to it and cook it for 30 seconds.
- Add chopped onions now. Toss it and cook for another 2-3 minutes.
- Add both the bell peppers and mushroom to it. Toss the veggies nicely.
- Sprinkle some Italian seasoning and chilli flakes to it. Mix it nicely.
- Now add our Alfredo Sauce to it which we cooked in the beginning. Coat it nicely. Add some milk to it so as it give it a little more creamy texture.
- Add our cooked pasta to it and adjust the seasoning according to your taste. (Tip - Don't add a lot of salt in the sauce)
- Mix the pasta with the veggies and sauce nicely. Your Vegetable Fusilli Alfredo is ready to be served.
- Serve it in a pasta bowl.
For Garnish -
- Sprinkle some Italian seasoning on top.
